Makes 2-3 sandwiches
- 6 hard boiled eggs
- ¼ cup finely chopped celery
- 2 tsp favorite mustard (yellow, stone ground, Dijon, etc)
- 1 tbsp dill relish or chopped dill pickle
- 1 tbsp mayo
- salt and pepper to taste
- Mix ingredients together.
- Once mixed, season to taste with salt and pepper.
Use more mayo for creamier texture.
To really kick this up a notch, add crumbled bacon.
