We've shown you how to roast peppers, but have you thought of grilling them??? You can roast them individually over a gas burner or you can get a hot grill going and toast them by letting them scorch on each side. Then let the peppers steam in a metal bowl covered with newspaper or cardboard and a towel to weigh down the paper or cardboard. After they have steamed for 15-20 minutes, peel the peppers and freeze in containers that are the amounts of your green chili or rellenos recipes. Peeling is a sticky process so remember to wear gloves if working with hot peppers --- it's no fun to rub your eyes or other parts with "hot" hands!
